Decluttering and Chocolate Mug Cake

Who thought this tiny virus would come this far? It’s way beyond our imagination, our heart sinks when we see those who are suffering and those who lost their lives.

It’s both unreal and surreal, the events that are cancelled, libraries, museums, stores and others. “Social distancing” will be the catch word of 2020.

Lucky us though, we are fortunate thus far that we can stay home and do whatever we want to do…

The things we can do are limited, but we can 

  1. Walk in the woods

  2. Read books

  3. Watch movies at home

  4. Decluttering!

I love decluttering. ;)

My husband decided to do a renovation in our basement bed/bath, 11 years since we moved here. We go through things we accumulated over those years and fixtures we inherited from the previous house owner.

It’s a lot, but this is the best time as we have not much to do during the weekend.

After a couple of hours of removing and cleaning with industrial masks on, I got tired and started craving a Chocolate cake.

So I made gluten-free Chocolate Mug Cake from Downshiftology. (Recipe here)

Ingredients are very simple.

  • 1/4 cup almond flour

  • 2 tbsp cacao powder

  • 2 tbsp maple syrup

  • 1 tsp coconut oil

  • 1 tsp vanilla extract

  • 1 large egg

In her recipe, she whisks all the ingredients in a measuring cup and pour the batter into a mug and microwave it for 1-2 min

3 tips from me:

  • If you feel lazy, you can whisk all the ingredients directly in a mug cup.

  • Instead of microwaving, you can bake it at 350 degrees Farenheit for 19-20 min. I do this as we don’t have a microwave (I don’t nuke my food ;).

  • Grease the mug cups with coconut oil. It will make it easy to clean the mug. I put the coconut oil (1tsp coconut oil as the recipe says) in a mug, and put it in the oven when it was heating for a min and add all the remaining ingredients in the same mug and whisk together. How easy is that?

Today, I didn’t have any berries, so I reduced maple syrup in half and put vanilla ice cream on the top of the chocolate cake. ;)
